I had you at “peanut butter banana”, right? Isn’t it just the best combo? Would you believe that you can have this epic treat ready to eat in ten minutes or less? And I bet you have all the ingredients in your kitchen right now. Yup! All you do Is mix 5 ingredients for a minute, split batter equally into each serving dish and nuke it for a minute and a half. Flip it on a plate and dig in! How easy is that? Don’t want to fool with the individual dishes? Then it gets even easier!
This is how I usually make it. I don’t even measure. I just dump it all in the bowl, mash it, nuke it, and eat it out if the same bowl. Actually, if it wasn’t for this blog I prob wouldn’t have put it in the cute little dishes and did “the flip”. I wasn’t even sure if it would work and was thrilled when they turned out looking like little volcanos erupting with bubbling hot peanut butter banana lava. I will def be whipping these up next time I’ve got company!

- 1 Banana
- 2 Fat Tablespoons peanut butter
- 2 Tablespoons honey
- 2 Tablespoons Butter
- 1 Tablespoon vanilla extract
- 1 Sprinke sea salt
- Drizzle Avacodo or Coconut Oil

- Mix all ingriedents in a bowl until mostly smooth. It will have some chunks and lumps and that means it’s just right!
- If making individual servings- Brush 2 ramekins with coconut oil & split the lava batter into each
- DO NOT OVER COOK! You’ve got to have that lava!!! The center should look like it isn’t cooked like the puffed edges of your cakes. That’s the lava and that is what makes this dish epic! Microwave times- Whole Bowl- 3 minutes 2 servings- 1 min 30 sec EACH *cook individually* **see tips below in “how to”section
- If you cooked your lava cake in a bowl, all you need is two spoons and dig in. If you are making your lava cakes in individual serving cups: Put your serving plate over on top of the hot lava cakes and immediately flip it over. Carefully lift the serving dish away from the hot lava cakes.
- Serve piping hot and enjoy!

Not even joking! You really do just whip this dish up. I seriously never even measured this recipe until I was writing this blog post. You know what? This is so simple that you almost can’t mess up as long as you DO NOT COOK IT TOO LONG.
Trust me. The sweet spot of what looks like uncooked batter in the middle is deceptive and you will be tempted to pop it back into the microwave. I did. DON’T DO IT!
I mean, it still tastes good. It’s warm cake made from peanut butter and banana so you know it can’t be bad. But what makes this desert epic is the oooey gooey lava. If you cook it for even 20 seconds too long you’ll loose that lava love.
Here are a few tips to make sure you get the perfect lava cake....
Choose a tall deep welled serving dish. You want it to be smaller on the bottom with sides gradually getting wider at the top. This cereal bowl and the square ramekins worked perfect. You could also use a small mixing bowl.
Have I mentioned how important it is not to over cook this? Since we cant be sure that your dish is the same as mine or that your microwave is calibrated the same, reduce the cooking time by 30 seconds. Nuke in 10 second intervals, checking the size of the lava center. You want it to be about the size of a quarter. The edges will puff up and the center will be gooey when its perfect.
15 seconds goes a long way in the microwave. The pics above show what a difference 15 seconds in the microwave makes.
This dish has to be served piping hot. Because cold lava is not good. So flip it over as soon as it comes out of the oven and serve immediately.
The individual servings are cute,but really are they always necessary? This’s is how I usually make it and it tastes just as good. Enjoy!
